A mature wine that needs to breathe and time to reveal its special aromas and flavours. Ideally, decant half an hour before drinking or frequently swirl the wine in the glass. Excellent with strong cheese and meat dishes.
Harvest by hand, de-stemmed and fermented for 3 to 4 weeks in 1000L wine tubs with manual press each day. When fermentation is complete it is pressed by using a traditional manual wine press. Aged in stainless steel tanks. No oak or additives were used, with very low sulphite levels.
